Showing the house style with its silky, polished, already approachable feel, the 2014 Pinot Noir Julia’s Vineyard offers impressive notes of black cherries, dark raspberry, dried flowers and spice. All from the sandy soils of Julia’s Vineyard in the Santa Maria Valley and vines planted in the 1970s, it was completely destemmed and aged in 40% new French oak, with a good portion of the blend seeing fermentation in barrel. It’s already hard to resist and I see no need to delay gratification.

92 points Jeb Dunnuck: "More black cherries, leafy herbs, licorice and dried earth notes emerge from the 2014 Pinot Noir Julia's Vineyard, and it's medium-bodied, concentrated and textured, with present tannin. It's a touch more angular than the Sierra Madre Vineyard, yet is also impeccably balanced, lengthy and long. This wine is all from vines planted in the 1970s (all Pommard clones), was completely destemmed and aged 16 months in 40% new French oak." (08/2017)

A stony coolness from the combination of the old vines and the stainless ferments brings a level of restraint and austerity that adds elegance to the layers that quickly build up on the palate. Fruit density from the low yielding vines and toasty notes from the barrel ferments add richness and length. For a cool climate chardonnay it displays remarkable amounts of fruit alongside the expected notes of citrus, stone and oyster shell brininess.

Armed with a degree in Soil Science from the University of Vermont and Vintages at Staglin, in Napa, California and Craggy Range in Hawkes Bay, New Zealand, Matt Dees has an intrinsic feel for wine, from dirt to glass. Curious and experimental by nature, Matt's approach to winemaking is grounded in the vineyard first and foremost: attuned to the vines, the weather, the soil, Matt seems almost to be a part of the vineyard itself. His attention to the subtle differences found between chardonnay and pinot noir due to clonal selections and site informs the sides of The Hilt's philosophy. And last but not least, Matt's fine hand with the wines in the cellar allows the precise expression of both Old Guard characteristics and Vanguard elements to emerge. When Matt's not exploring this duality in chardonnay and pinot noir, he can be found making the wines for its sister winery—Jonata.

So integrated. The palate has a very silky texture, so plush and polished with a wealth of rich and intense dark-plum, dark-berry and blackcurrant flavors. The oak is completely soaked with ripe, fresh fruit. This is a great Bin 389. Drink over the next two decades.

Supple and nimble, it keeps shifting and changing in the glass. A truly beautiful blend.

Leading off the Pinot Noirs, the 2017 Pinot Noir Estate reveals a deeper ruby/purple-tinged color as well as a ripe, sexy bouquet of black raspberries, cassis, scorched earth, violets, and background oak. Rounded, medium to full-bodied, textured, and just loaded with dark fruit on the palate, it's beautifully balanced and will drink fabulously well for at least 7-8 years.

Bentrock Vineyard lies in the southwestern corner of the Sta. Rita Hills, and produces racy, lively wines that can be almost austere in their youth. The Hilt’s 2017 vintage of this estate site takes this edgy nature and combines it with a velvety richness. The nose is at once breezy and metallic, with aromas of clay dust, gunmetal and chalk. The palate is fine and granular, showing flavours of salted cranberry, grapefruit pith and cloves.
