A stony coolness from the combination of the old vines and the stainless ferments brings a level of restraint and austerity that adds elegance to the layers that quickly build up on the palate. Fruit density from the low yielding vines and toasty notes from the barrel ferments add richness and length. For a cool climate chardonnay it displays remarkable amounts of fruit alongside the expected notes of citrus, stone and oyster shell brininess.


Armed with a degree in Soil Science from the University of Vermont and Vintages at Staglin, in Napa, California and Craggy Range in Hawkes Bay, New Zealand, Matt Dees has an intrinsic feel for wine, from dirt to glass. Curious and experimental by nature, Matt's approach to winemaking is grounded in the vineyard first and foremost: attuned to the vines, the weather, the soil, Matt seems almost to be a part of the vineyard itself. His attention to the subtle differences found between chardonnay and pinot noir due to clonal selections and site informs the sides of The Hilt's philosophy. And last but not least, Matt's fine hand with the wines in the cellar allows the precise expression of both Old Guard characteristics and Vanguard elements to emerge. When Matt's not exploring this duality in chardonnay and pinot noir, he can be found making the wines for its sister winery—Jonata.

To understand the wines made by The Hilt, one might need to come visit the hard and harsh conditions under which they are born. The unobstructed, ocean facing east-west valley known as Sta. Rita Hills Valley is a complex AVA. One could divide it into four quadrants: northern-facing, southern-facing, close to the ocean, and further inland from the ocean. With such a frame, The Hilt’s favorite vineyards are in the northern-facing, closest to the ocean, windswept quadrant. These sites are the worst place for a grape grower, but the best ones for a winemaker.

High elevation and limestone soils mark Mt Carmel Vineyard out. The vines are dry-farmed and the result is wonderful: ripe fruit only just peeks though on the nose, an aromatic notion of ripe yellow apple with lemon brightness, surrounded by echoes of smoky hazelnut. The palate resprises this theme, and everything is still taut and dew-fresh, it seems. This is precise, concentrated and elegant; its considerable force is brought into enviable poise. "Mail Road's 2014 Chardonnay Mt. Carmel Vineyard has also turned out beautifully. Nuanced, layered and deep, but never heavy, the 2014 is wonderfully translucent and expressive. Based on how the 2014 tasted from barrel, I expected the wine to be a bit more intense. Instead, the 2014 has turned out to be more airy and weightless in style. Nevertheless, the wine is quite pretty. Bright, saline notes add to the wine's considerable appeal. "

I was blown away by the 2019 Pinot Noir Bentrock Vineyard, which is up with the crème de la crème of the vintage. Medium-bodied, finesse-driven, and incredibly elegant, it has a great, great bouquet of black raspberries, cherries, wild strawberries, sappy flowers, and violets. Utterly seamless, with fine tannins, no hard edges, and perfectly integrated acidity, give it a year and enjoy over the following decade (JD). (8/2021)

The 2019 Pinot Noir Bentrock is bright, focused and savory. There's tremendous energy and focus. Blood orange, spice and chalk are all kicked up in an exotic, wild Pinot that pushes all the right buttons. The Bentrock is the sort of wine you want to spend an entire evening with. I would give the 2019 a few years in bottle, but I expect it will always be nervy, taut and delineated, as it is today (AG). (6/2021)

The 2017 Chardonnay Mt Carmel Vineyard, predominately from vines planted in 1990, has a nose of bruised apple, baker’s yeast, apricot and nectarine with petrichor, dried hay and faint white blossom notions. Light to medium-bodied, it's concentrated in the mouth with tons of mineral notions, great freshness and a long, textured finish. This is an unusually earthy and textural style of Chardonnay, but it's delicious and will be amazing with food! 120 cases were made.
